Chicken

Hey there,
This week menu would be chicken,
My creation dish is Roasted chicken stuffed with spinach and blue cheese accompanied by oven dried tomato,roasted pumpkin roasted zuchinni and risotto.
The sauce I've tried to make this time is actually Lemon herb sauce, my first time doing it.
Didn't work that well though at least I took risk.

So the chef commented:
Taste of chicken is good,
Oven dried tomato just nice,
The sauce/ Dressing is too sour and the zest is too coarse.
Risotto a little too creamy..

Overall I think i didn't perform that well for this service..lol
Guess I'll do better next time.

Lamb

The main course for this week is lamb,
I've tried to cook lamb before but this time I try to make my own yoghurt sauce.
Which work pretty well for me..

Chef commented that the sauce is nice,
Presentation idea is good but if there's another different colour would be good.
Marination on lamb is good but could at a little more flavour.

In overall I'm satisfied with what I've done for this class,
Hope that the next menu which is chicken I can improve..

Quack Quack!

Quack Quack!!
The Canard is calling..haha,
Its duck week,..actually..haha,,this menu was a month ago,
So we're given duck and few items to cook from scratch once again, and my creation for this menu is..

Roast Duck with Braised Cabbage and Caramalized Mango with Risotto accompanied by Gastrique Sauce.

Overall I think I did pretty not good..its pretty obvious from the picture below..

Here are what the chef comments..

Duck is kinda rare
Portioning of duck a little too much
Cabbage lost its colour
Caramalized Mango not caramalized enough..

My personal comment for my dish would be,
Sauce a little diluted which made the presentation looks messy
Mango cutting totally not nice,
More seasoning on duck and add herbs to enhance the taste as well as get rid of the strong duck smell..

Overall this is all we have this time as our class has been made smaller to just 10 people..
And it is very very very obvious on the presentation and culinary skills of ex DH students and ex DC students..
Obviously, their idea and end product is more satisfying than of DH..and I have nothing more to say than needing more practice and pointers from them..lol..

Menu Week 1 : Fishy week!!!

Bonjour!
finally after so long this is the post for the first menu given to us..

its Poisson which is Fish,..not poison okay..poisson in fish in French,
So each week we'll be given few choice of side dishes to do as well to accompany the main item, so as for mine I have chosen cherry tomatoes and cooked it oven dried,some carrots, and did potato Lyonnais to accompany my pan-fried fish..

The comment from the chef for mine was,,haha

Portioning too big,
Don't hide the food items (in this case the carrots)

basically this blog is another project from my college where once every 2 weeks we'll cook something from scratch with no recipe and all from our creativity and presentation of how a fine dining main course should be presented..=D
